Our marlin is caught in the Fiji waters and around FAO 71, by our long line fishing vessels. With a high fat content the fish has a naturally lacquered appearance and the flesh colour varies from orange-red which is ideal for eating raw and pink to light-coloured flesh ideal for serving as steaks.
